This is a refreshing mocktail that can be enjoyed at any time of the day, though it’s great to drink during those hot, humid afternoons. The cucumber and mint will cool you down and the pineapple will wake up your palate.
Glass: mason jar
Ice: tube ice
Ingredients:
- 240 ml pineapple juice (1 can)
- 8-10 mint leaves
- 2 1-inch slices cucumber
- 15 ml simple syrup
Directions:
- Muddle cucumber in mason jar.
- Clap mint and add.
- Pour pineapple juice and simple syrup.
- Add ice and stir.
- Top with crushed ice and garnish with rolled cucumber peel and mint.
