How to make cardamom and black pepper syrup

This infused syrup goes perfectly well with cocktail mixes (see Rattan Sour for ingredient use). The spicy, herbal, and citrusy character of cardamom is complemented by the heat of peppercorns. It’s a good warming mixture to sweet drinks and spicy cocktails.


ingredients

Ingredients:

  • 8-10 pieces of cardamom pods
  • 2 tablespoon of peppercorns
  • 3/4 cup of water
  • 1 cup of sugar

Directions:

  1. Crush the cardamom pods with mortar and pestle (only until the pods are open)
  2. Crush the peppercorns
  3. Pre heat the pan and toss the cardamom and pepper
  4. Toss the ingredients until you smell its sweet and spicy aroma
  5. Add water
  6. Add sugar
  7. Stir constantly with a spatula for 3 to 5 minutes until the sugar dissolves completely and the mixture is clear
  8. Transfer to a bowl and let it cool
  9. Bottle the mixture for use in your bar or kitchen
