Cilantro might be offputting for some people. But this drink is a perfect marriage between the cilantro and caramelized lemon. The sweetness of the caramelized lemons balances the distinct flavor of cilantro, and the ginger ale adds bubbliness, resulting in a layered, well-balanced drink. For those that can’t be swayed to get on the cilantro bandwagon, you can substitute it with parsley.
Ingredients:
- 25 ml lemongrass syrup
- 60 ml pineapple juice
- ginger ale (to top)
- 2 sprigs cilantro
- 4 lemon slices, caramelized
Directions:
- Caramelize lemon slices (sprinkle muscovado sugar and torch).
- Muddle caramelized lemon slices and cilantro in glass.
- Add lemongrass syrup and pineapple juice in shaker, add ice and shake.
- Pour into glass, add ice and mix.
- Top with ginger ale and crushed ice.
- Garnish with cilantro.
