Cilantro might be offputting for some people. But this drink is a perfect marriage between the cilantro and caramelized lemon. The sweetness of the caramelized lemons balances the distinct flavor of cilantro, and the ginger ale adds bubbliness, resulting in a layered, well-balanced drink. For those that can’t be swayed to get on the cilantro bandwagon, you can substitute it with parsley.

Ingredients:

  • 25 ml lemongrass syrup
  • 60 ml pineapple juice
  • ginger ale (to top)
  • 2 sprigs cilantro
  • 4 lemon slices, caramelized

Directions:

  1. Caramelize lemon slices (sprinkle muscovado sugar and torch).
  2. Muddle caramelized lemon slices and cilantro in glass.
  3. Add lemongrass syrup and pineapple juice in shaker, add ice and shake.
  4. Pour into glass, add ice and mix.
  5. Top with ginger ale and crushed ice.
  6. Garnish with cilantro.
