Ginger Calamansi Cooler

This soft cocktail is a great option for those looking for a spicy kick in their drink. The ginger provides a soothing element apart from the spice that can cool you down. The non-alcoholic bitters provides another layer of flavor while balancing the sweetness of the Sprite. You can use the candied ginger as a stirrer to add more spice and sweetness to the drink.

Ingredients:

  • 3 pcs ginger, muddled
  • 20 ml calamansi juice
  • 15 ml Giffard Bitters
  • Sprite (to top)

Directions:

  1. Muddle ginger in mason jar.
  2. Add calamansi juice and Giffard bitters.
  3. Add ice and top with sprite.
  4. Garnish with candied ginger.

How to make candied ginger:

  1. Peel the ginger root and slice into thick bite size.
  2. In a pan, add 1 cup of water, 1 cup of brown sugar, and the ginger slices.
  3. Bring to a boil and lower the heat. Cook until the ginger is tender and the sugar is starting to crystallize.
  4. Remove from heat and drain excess liquid from the ginger bites.
  5. Roll the ginger bites in white sugar. Let it cool and place in a jar.
