A recipe collaboration between Long Bar bartenders, this cocktail is inspired by Filipino culture and the spirit of Christmas celebrations where loved ones reunite. It is customary in every Filipino family to have a colorful, decorated Christmas tree at home. The pineapple represents the bounty of harvest and generosity where people enjoy exchanging crops and presents for the gift-giving season.
Ingredients:
- 45 ml Raffles 1915 Gin
- 45 ml lime mix (fresh lime juice and sugar syrup)
- 3 to 4 slices of pineapple
- 2 to 3 fresh rosemary sprigs
- Pinch of black pepper
- Glass: Flute
Garnish: Rosemary and cranberries
Ice: Cracked ice
Directions:
- Muddle the slices of pineapple in a shaker
- Add all rosemary sprigs, all liquid ingredients, and a pinch of black pepper
- Add cracked ice. Shake.
- Serve in a flute glass with cracked ice and garnish with fresh rosemary sprig and top with three cranberries.
Tasting Notes: The aroma is piney from the juniper notes of Raffles 1915 Gin and the rosemary sprig. The drink has a complex array of spicy, sweet, and minty notes with a vibrant, tropical, fresh, and zesty citrus finish.
