Impress your friends with this unique highball! The inclusion of arugula and cheese works well with the savory Gin Mare. You can experiment with different kinds of cheese for garnish, or serve a cheese platter to pair with this gimlet highball twist!
Ingredients:
- 45 ml Gin Mare Gin
- 25 ml lime juice
- 15 ml simple syrup
- 2 arugula Leaves
- 2 slices of cucumber
- Sliver of Fontina Cheese
- Tonic water (to top)
Glass: Highball glass
Garnish: 2 slices of cucumber and a sliver of Fontina cheese

Directions:
- Muddle cucumber in the bottom of the tin can.
- Add gin, lime juice, syrup and some ice, add arugula and add ice again.
- Shake vigorously for 15 to 20 seconds.
- Double strain into a highball glass.
- Top with tonic water and garnish with cucumber and a sliver of Fontina cheese
