DrinkManila has teamed up with The Bar Gin to bring a taste of its new gins to the buzzing nightlife of Poblacion in a three-night series. Our first stop was at the new Mexican bar, Cinko PH. We turned the rooftop bar into a gin garden haven on November 22, placing potted herbs and plants all around the place, and little signs with funny gin puns like, “Forgive me, Father, for I have ginned,” and “Let the evening be gin!”

The bar takeover has two parts, and the first is our drink-all-you can G&T promo for only P350, where guests enjoyed and explored six G&T recipes made especially for the three variants of The Bar, and even got to take home a free balloon glass from The Bar Gin.

After guests had their fill of G&Ts, DrinkManila’s resident mixologist Icy Mariñas served up three fun cocktails with The Bar Gins. The berrylicious and sweet Pink Sky Mind (The Bar Pink Gin, Monin Strawberry Purée, basil, lemon, ginger ale, crushed ice, raspberry foam and Potchi Strawberry Cream garnish) looks like a posh version of the local shaved ice ‘ice scramble’ and kicks up the berry notes of The Bar Pink Gin, and complementing it with the basil.
Cosmic Boom (The Bar Lime Gin, Green Chartreuse, cucumber, lime, Monin Green Apple Syrup, sour tape candy and lime with blue pea flowers popsicle garnish) is a tart cocktail that is fun to look at and fun to drink, as it not only changes color from green to purple but also changes flavor as the popsicle garnish melts.
Prudence Night (The Bar Premium Dry Gin, smoked sage, Campari, Aperol, choco bitters, orange bitters, and choco-orange garnish) is a spirit-forward cocktail that that will impress even seasoned drinkers. It’s a potent drink that doesn’t take itself too seriously and is best enjoyed with the choco-orange garnish that brings another dimension to the cocktail.
It was a chill night with a relaxed atmosphere, where guests enjoyed the cool evening breeze and early 2000’s music while sipping G&Ts and cocktails and munching on yummy Mexican food. We even set up a Gin Pong table (why play with beer, when you can level up with gin?) for people who wanted a bit of friendly competition with their gin drinks.
