Ced created this cocktail for DrinkManila Christmas recipes featuring Filipino popular Christmas songs and the drink is inspired by the song Misa de Gallo, composed by Philippine National Artist, the late Levi Celerio.

“Misa de Gallo is the most awaited mass of the year where Filipino families gather together for the mass. It’s in our culture to make a strong bond with our family and receive the blessing of the Gospel. Outside the churches, there are a lot of stalls making bibingka and it has become a tradition that after mass, families would flock onto the stalls for a bite of hot bibingka. I made this cocktail with flavors of bibingka in mind.” – Ced

Ingredients

30 ml Bacardi 8
30 ml Malibu
30 ml sugar syrup
15 lemon juice
60 ml pineapple juice
60 ml almond milk
1 strawberry


How to make the cocktail:

Muddle the strawberry and add all ingredients in a shaker with ice.
Strain in a glass covered with banana leaf and serve with bibingka.

This drink will be available this Christmas season at Nomu.
