This cocktail recipe is inspired by the Filipino Christmas song Miss Kita Kung Christmas, sang by Susan Fuentes and also popularized by Filipino singer Rico J. Puno.

“My Inspiration for this cocktail recipe are the people from the food and beverage industry working abroad or aboard a cruise ship. Our colleagues overseas sacrifice their Christmas celebration without their loved ones. The color blue taken from the blue pea flower represents the longing these workers endure during the yuletide season. The color yellow represents the joy of the Christmas season.” — Niño

Ingredients

45 ml Bacardi Coconut Rum infused with blue pea flower
20 ml fresh lime juice
90 ml Clarified pineapple juice
dried coconut for garnish

How to make the cocktail

Infuse the rum with blue pea flower for a few minutes. Once it turns blue, you may start using the liquid.
Add fresh lime juice and clarified pineapple juice into a shaker with ice.
Throw the liquid to have a lesser aeration (do not shake).
Strain into a glass with ice. Serve.
