HK’s DarkSide Takes Over The Back Room for One Night Only

Get ready for a unique drinking experience as The Back Room’s Bartender Series brings the Hong Kong’s Darkside to BGC. DarkSide, a cocktail bar located at the Rosewood Hotel, placed 13th on Asia’s 50 Best Bars 2022 list, 49th in World’s 50 Best Bars 2021, and was named Best Bar and Best Hotel Bar at Time Out Hong Kong Bar Awards 2021. The multi-awarded bar offers rare aged spirits, vintage cigars and classic cocktails complemented by sultry live jazz and their cocktail list pays homage to Kowloon’s “Dark Side” moniker and focuses on time-honored traditions updated with innovative techniques.

Inside DarkSide

Director of bars for Rosewook Hong Kong, Simone Rossi, and DarkSide’s assistant bar manager, KT Lam, will be bringing a taste of DarkSide’s signature cocktails to our shores. Simone is an industry veteran and is regarded as one of the best bartenders in Hong Kong. He cut his teeth working at Caribbean-influenced Veranda, the members-only SoHo institution Quo Vadis, a SoHo institution, and celebrated rooftop bar, Aqua Spirit. He is also no stranger to bartending competitions, earning the prestigious Diageo World Class Country Winner title in 2018 representing Hong Kong and Macau.

KT is the man behind the creation and concept of DarkSide’s menu. He’s been in the industry for 8 years in various roles that exposed him to a broad range of techniques and knowledge. Prior to joining Rosewood Hong Kong, he spent three years with Zuma Restaurant as Head Bartender. Born and raised in Hong Kong, Lam’s career was launched  when he joined KEE Club as Bartender, where he fell in love with the daily operations and developed his enduring passion for the hospitality and bar industry.

Martini VS Vesper: Citadelle Gin, Mancino Bianco Vermouth, Mancino Secco Vermouth, Peach Bitter, Wakamomo
DarkSideCar: Pierre Ferrand 1814 Cognac , Pierre Ferrand Dry Curaçao , Calvados, Lemon Sherbet
40sq Feet: Plantation Dark Rum, Chocolate Campari, Plum, Umeshu, Mancino Rosso Vermouth
Waxing Gibbous: Taro Vodka, Lychee , Pandan & Coconut Vinegar , Tio Pepe , Sandalwood

Check out Simone Rossi and KT Lam behind the stick on February 15, Wednesday, at The Back Room located at Shangri-la The Fort, 30th Street, corner 5th Ave, Taguig City. The fun starts at 8:00 pm.
