Chablis is a white wine made from the Chardonnay grape, produced in the Chablis region of Burgundy, France. Known for its high acidity and minerality, Chablis rarely utilizes oak aging and is characterized by a crisp, clean taste with subtle flavors of green apple, lemon, and sometimes notes of flint or wet stone. These flavors reflect the unique terroir of the region, which features a naturally cool climate and a chalky, marine-fossil-enriched subsoil dating back 150 million years to the Kimmeridgian geological period. In Chablis, the vines are classified into four levels of appellation: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. This classification yields remarkable bottles of wine, each offering a versatility that makes them ideal choices for pairing with different cuisines, making it ideal for everyday dining or for special occasions like Christmas feasts and New Year’s Eve gatherings. 

In a recent Chablis White Party event in Hong Kong hosted by the Chablis Commission, part of the Bourgogne Wine Board that manages the worldwide promotion of the wines of Chablis, they’ve outlined a list of Chablis wines that you should be adding to your cart for the holiday season.

This bottling offers floral with apple and citrus notes on the nose, a round palate, and pairs well with shellfish like oysters, lobster, and white fish due to its naturally high acidity.
