Larry Lloyd Andrada has been immersed in the hospitality industry for six years and currently serves as the head barista at Oto in Poblacion. His interest in bartending blossomed two years ago as he began experimenting with various ingredients and flavors.
For the festive season, he has created a rum-based cocktail inspired by the Filipino dessert known as Crema de Fruta, which features layers of sponge cake, custard, fruit cocktail, and a gelatin topping. “I’ve seen many Christmas dishes transformed into cocktails, but I haven’t encountered this one in liquid form,” Larry explains.

Ingredients:
45ml Spiced Rum
30ml Light Cream
15ml Monin Tropical Island blend Syrup
10ml Monin French Vanilla Syrup
Directions:
Add the ingredients to a shaker, add ice, and shake until well-chilled. Strain the mixture into a rock glass. Garnish the cocktail with a cherry and yellow papaya.

This cocktail features a refreshing fruit medley with tangy and tropical notes. The Monin French Vanilla Syrup contributes a custard-like flavor, while the addition of light cream adds a smooth texture, enhancing the drink’s sweetness and creating a rich, full-bodied experience.
