Its new sky bar is an ideal spot for sundowners and offers a sneak peek at the games. Both the cocktail menu and the view from this sky bar make the trip to this side of Hong Kong worthwhile.

Taking its name from London’s famed rooftop bar atop Hotel Saint, formerly the site of Dorsett City London, the Kai Tak location is the sky bar’s first overseas outpost. Named after the Jin Bo Law, the golden wine cup from the imperial dynasty of China referenced in the poem “Diu Jiu” by the famous Chinese poet Li Bai, the 80-seater bar seamlessly blends Asian cultural inspiration with modern refinement. It features spacious seating and an outdoor area overlooking the stadium.

The bar is led by Joe Villanueva, Dorsett Hotels’ head of bars and beverages, who has worked in various hospitality establishments, including The Kerry Hotel, W Hong Kong, and the Shangri-La Group. The bar program offers a selection of wines, beers, and Asian spirits like whisky and gin, along with a good variety of baijiu. The menu is categorized into three parts and combines East and West flavors, along with a non-alcoholic version. It features sweet, sour, and punchy options, offering something for everyone.

The East-West Synergy menu offers a vibrant fusion of Chinese spirits and bold flavors. Among the standout drinks is the Negroni riff Baijiuni (HK$128), crafted with Ming River Baijiu, chocolate-infused rosso vermouth, strawberry-infused Campari, and a touch of saline solution. Don’t miss the New York sour-style twist, HK Sour (HK$128), featuring Scentiment Baijiu, a clear sweet and sour mix, and Ratafia Rossi for a refreshing twist.

The Odyssey cocktail menu presents five signature drinks named after five Asian countries. Drinks include HKG (HK$138) made with N.I.P gin, preserved citrus marmalade, and super lemonade garnished with salted plum, which is reminiscent of Hong Kong drink Salty-lemon Seven-up. There’s also the PHL $128 named after the Philippines, a tropical drink made with Planteray 3 Star Rum white rum, pineapple and coconut cordial, citrus, topped with thick, flavorful ube foam.

Those who want to skip the alcohol can enjoy six signature non-alcoholic selections that deliver full flavors, such as guava, carrot and ginger, tomato and basil, and more, all without the buzz.
