Prepare to indulge in various sake varieties at Solaire Resorts and Casino’s Japanese restaurant, Yakumi in Manila. For one night only on January 23, savor a six-course sake pairing dinner thoughtfully curated by its new executive chef, Jin Suzuki.

Chef Jin has crafted a menu featuring indulgent and unique dishes that showcase the finest elements of Japanese cuisine, perfectly complementing the evening’s sake selection. Solaire’s director of beverage, Daniel Blais, brings his expertise to the table, expertly pairing premium sakes with each dish to create a harmonious blend of flavors that enhances the overall dining experience.

A highlight of the evening is the introduction of an aromatic and fruity sake, exclusively brewed for Solaire: the Junmai Daiginjo ’Solaire 65%,’ milled by the Kagamiyama Sake Brewery using specially grown Sake Musashi rice from Saitama Prefecture.
The menu begins with an exquisite amuse-bouche of smoked Hokkaido scallops, tiger prawns, seaweed crystal, and Japanese soup stock jelly, paired with the Kagamiyama Junmai Daiginjo, celebrated for its floral and fruity notes. Following this, guests will enjoy seaweed-marinated flounder and fatty tuna, served with wasabi and rose flower, complemented by the Junmai Daiginjo’ Solaire 65%’.

Other standout dishes include a comforting Japanese curry with glutinous rice and conger eel, paired with the floral and umami-rich Junmai Ginjo Omachi’ 55’. Additionally, steamed Japanese sea bream is served with green tea, soba noodles, and yuzu “Hokkaido” beurre blanc, matched with the Junmai Ginjo’ 55’ Aka Yamahai. The main course features sous vide Wagyu beef striploin, garnished with foie gras, truffle, and red miso, perfectly paired with the complex flavors of the Junmai Black Dragonfly 2-Year Aged Kimoto.
Guests can conclude the meal with a hazelnut praline mousse tube drizzled with salted caramel sauce, complemented by praline crunch, caramel Chantilly, and vanilla mochi, all paired with Mio Sparkling Sake, which boasts aromas of peach, ripe persimmon, freesia, and fresh bread.
