This month’s wine dinner at a sommelier-led French neo-bistro, Somm, promises to be a treat for the senses. Centered around Burgundy vintages from 2021—a year marked by significant climate challenges—this event showcases the extraordinary talent of winemakers who rose to the occasion to create remarkable wines. Guests will enjoy an exclusive four-course degustation menu crafted by chef Richard Ekkebus, highlighting spring favorites that perfectly complement the evening’s stellar lineup of eight carefully curated bottles from seven Burgundy winemakers.
Reception starts at 7pm, followed by dinner at 7.30pm. The wine dinner menu is priced at HKD2,188 per person. The dinner begins with raw slices of buri topped with tomatillo jalapeño, colatura di alici (Italian fish sauce) and extra virgin olive oil, complemented by 2021 Sylvain Pataille Bourgogne Aligoté and 2021 Domaine Glantenay Bourgogne Aligoté VV. Next, guests will enjoy a raviolo filled with Boston lobster, accompanied by morels, shallots, and sautéed snap peas in a lobster bisque, paired with 2021 Jean-Marc Pillot Chassagne-Montrachet and 2021 Marc Colin Chassagne-Montrachet Margot. The main course features an oven-roasted pigeon breast and leg confit, served with almond-crusted potato croquettes, sautéed spring vegetables, and giblet jus, paired with 2021 François Bertheau Chambolle-Musigny and 2021 Felettig Chambolle-Musigny Clos Le Village. The dinner concludes with an aged comté cheese soufflé, paired with 2021 Henri Boillot Volnay and 2021 Domaine Glantenay Volnay.
