Filipinos have a special fondness for ube, or purple yam, which has long been a staple in celebratory dishes and special occasion treats throughout the Philippines. Its vibrant violet hue has inspired a variety of sweet delights, from ice cream and shakes to jams, cakes, and pastries. In this drink, we’re featuring ube in a clarified cocktail that removes the striking violet color while preserving its earthy and nutty notes. Ingredients:
45 ml Mezcal Artesanal 400 Conejos
45 ml Agimat Ube Cream Liqueur
45 ml Pineapple Juice
45 ml Coconut Creme
15 ml Coconut Liqueur
15 ml Lemon Juice
15 ml Agave Syrup
1 pinch of Sea Salt
Ube Chips for garnish

How to make the cocktail:
To clarify the drink, start by using a pour-over coffee dripper. Begin by adding all the ingredients to a tin shaker and dry shaking them well. Next, place a coffee filter in the dripper and gently pour the shaken mixture into it. Allow the curdles to settle for a moment, then let the liquid drip for about a minute. Once the first batch of dripped liquid appears cloudy, collect it and pour it back through the filter to achieve a clearer result. Continue filtering until all unfiltered liquid runs clear.
Once clarified, transfer the liquid into an empty bottle and chill it until ready for service. When you’re set to make the cocktail, fill a mixing glass with ice and pour in 90 ml of the clarified cocktail. Stir until very cold, then strain the mixture into an antique coupe glass. Finally, garnish with an ube chip and enjoy!

This cocktail blends smoky mezcal with the sweet, earthy notes of ube liqueur for a unique depth. Pineapple juice and coconut milk add a creamy, tropical richness, while coconut liqueur enhances the smoothness. A splash of lemon juice and agave syrup brings refreshing acidity and sweetness, complemented by a pinch of salt to balance everything. Take a bite of the ube chip after sipping to enhance the earthy sweetness of the ube notes!
