Award-winning Manhattan Bar at Conrad Singapore Orchard has launched a new cocktail menu called Seasons of Manhattan. It’s built around the idea of time, specifically how the seasons change in New York City. The menu features cocktails inspired by spring, summer, fall, and winter, using the city’s culture and iconic moments as the starting point.
The menu is designed like a desk calendar. Each page features pop-up illustrations that bring a season to life, like flowers blooming in Central Park or lights glowing at Rockefeller Center.

Spring break is reimagined as Where the Boys Are, a mix of tequila, mezcal, citrus, plum, and blackberry. The drink’s red color is a nod to the classic solo cup, while a melon sphere and dried plum mimic a ping pong ball referencing college parties and the game of beer pong. Meet Me Halfway mixes whiskey, pear liqueur, lychee, rose, and honey, which is the bar’s nod to the Met Gala.

For summer, It’s Gettin’ Hot in Here is a warm cocktail made with butter-washed genever and honey infused with basil, sage, thyme, and chili. It’s heated and served in a teacup on a concrete slab, a nod to the city’s summer heat. Harlem Shake is a rum-based drink with coconut cream, pineapple, lime, hazelnut liqueur, and gardenia. It’s tropical, and inspired by the Harlem dance scene of the 1980s.

Autumn starts with Tatami Shot, made with Japanese single malt whisky, baijiu, spiced pear, pimento, and lemon-mushroom oleo. It’s topped with espresso foam, seaweed, and matcha. There’s also a nonalcoholic version called Autumn Sonic, which uses the same base flavors with soda, tonic, and the same espresso foam on top.
Winter in New York is represented by Minutes to Midnight, a mix of Lillet Blanc, bergamot liqueur, Champagne, and grape. It’s served in a mini Champagne bottle and poured at the table, topped with a fizzy grape as a nod to the New Year’s Eve tradition of eating 12 grapes at midnight for good luck, something that got global attention in 2024.

The bar’s rickhouse, which is the first barrel-aging room inside a hotel, also features cocktails for the new menu. It features four aged cocktails, including Triumph of Liberty, a smoky Old Fashioned inspired by the Fourth of July. This season also brings in guest creations from two-time Australian Bartender of the Year and one of the Bar World 100’s most influential figures, Millie Tang, along with a signature pour from London’s Connaught Bar.
The food menu follows the seasons too, with bites made to go with the cocktails. Spring kicks off with a smoked soy egg served deviled-style, topped with creamy avocado and trout roe. Summer brings in lobster tacos wrapped in crispy wonton. For autumn, there’s a Burmese curry with roasted cauliflower and burrata. And to finish the year, winter’s dish is hamachi tartare with Tom Yum dressing, served on crispy tostones.
