Renowned French chef Olivier Elzer, best known for leading L’Envol to two Michelin stars, has a new project in Vietnam. The acclaimed chef is bringing his signature French-Mediterranean style to JW Marriott Phu Quoc Emerald Bay Resort & Spa. The hotel’s beachfront fine dining venue has officially been rebranded as Pink Pearl by Olivier E.
Set inside a pastel-pink mansion designed by Bill Bensley, the restaurant channels the glamour of the French Riviera with a storytelling rooted in the character of Madame Pearl Collins, a fictional 1920s socialite said to throw the island’s best dinner parties.

Olivier Elzer, originally from Alsace, is one of the most awarded chefs in the region. Over his three-decade career, he’s helped earn multiple Michelin stars across top restaurants in Asia. In Hong Kong, he’s best known for L’Envol at The St. Regis, where he serves as Culinary Director and led the restaurant to two stars within just two years.

At Pink Pearl by Olivier E., guests could expect a creative but approachable menu inspired by Elzer’s time on the French Riviera. Highlights include charcoal-cooked bonito with endive salad, Comté cheese, and Vierge sauce, as well his classic Bohémienne (eggplant, tomato, and parmesan). Dishes are made with local produce from farms and fishing communities, along with premium ingredients flown in.

Guests can choose from two tasting menus. One with five courses and another with seven both curated by chef Olivier Elzer. On Sundays, the restaurant hosts an indulgent brunch experience set against Phu Quoc’s beachfront. Wine pairings are selected by master sommelier Bertrand Lutaud, who draws from top vineyards in France and beyond.
